Uchepos
Mexico · Latin America

Uchepos are soft fresh-corn tamales associated with Michoacán. Pati Jinich’s sweet version blends tender corn kernels with condensed milk, then adds cornmeal or rice flour, cinnamon and salt to form a moist dough.[1][2]
The dough is enclosed in corn husks and steamed with the open ends facing upwards. Mexican crema and crumbled queso fresco are optional accompaniments.[1]
