Tagine de poulet aux citrons confits et olives

Chicken with preserved lemon and olives is a Moroccan dish in which chicken cooks with onion, garlic, herbs and spices. Ginger, saffron and pepper are among the seasonings. Preserved lemon pulp can flavour the sauce, while strips of its rind and green or purple olives serve as a garnish. The dish may cook in a tagine or a heavy pot.[1]

Nada Kiffa’s festive version includes daghmira, a thick onion sauce made by slowly reducing the chopped onions. The chicken can be removed while the sauce continues cooking, or some onions can be cooked separately after the chicken is done. The reduced sauce is served with the chicken, preserved lemon and olives. Chicken liver is an optional addition in her recipe.[1]
