Xima with grilled fish
Mozambique · Sub-Saharan Africa

Xima is a thick porridge served with fish, meat or vegetables in Mozambique; the national tourism site also calls it upshwa and lists maize or cassava flour as bases. ACIAR’s field cookbook gives a maize version: flour is gradually mixed into heated water, then more is stirred in until the porridge becomes firm.[1][2]
Grilled fish provides one accompaniment. Anantara Bazaruto Island Resort’s cooking-class menu lists grilled fish with piri-piri, and separately offers shima and piri-piri sauce among its side options. These are separate menu choices, not a prescribed single plate.[3]
