Nasi lemak with sambal ikan bilis
Malaysia · Southeast Asia

Nasi lemak is coconut-milk rice served with sambal and assorted accompaniments. Bee Yinn Low’s version cooks rice with coconut milk, water, salt and pandan. Fried dried anchovies, known as ikan bilis, are mixed into sambal made from dried chillies, shallots, garlic and belacan shrimp paste.[1]
The spice paste is fried before onion rings and anchovies are added. Tamarind water, salt and sugar season the sauce, which simmers until thick. The rice is served with sambal, boiled egg, roasted peanuts, cucumber and fried small fish. The anchovies and sambal can also be served separately.[1]
