Pavlova with Kiwifruit
New Zealand · Oceania

Pavlova with kiwifruit is a meringue dessert topped with whipped cream and fruit. The meringue has a crisp shell and a soft centre. Egg whites are beaten with sugar, then combined with vinegar, vanilla and cornflour before baking. Pavlova is a Christmas and summer-celebration dessert in New Zealand and is also associated with Australia.[1]
The cooled meringue is filled with whipped cream and fresh fruit, including kiwifruit. Annabel’s layered version published by Chelsea Sugar stacks three meringue rounds with vanilla whipped cream and kiwifruit-and-lime curd, then finishes them with crystallised lime and fresh kiwifruit.[1][2]
