Dark leafy stew with pieces of meat and soft white starch on a plate.
efo riro

Efo riro is a Nigerian leafy stew cooked in a pepper sauce. Lola Osinkolu’s spinach version uses red bell peppers, Scotch bonnets, onion and palm oil, with locust beans and ground crayfish for seasoning. Cooked meat, stockfish and dried prawns are added to the sauce.[1]

The peppers and some onion are blended. Diced onion is fried in palm oil before the blended mixture is cooked until thick. The seasonings, meat and fish follow, with water or stock loosening the sauce. Blanched spinach is mixed in last and cooked briefly. Rice, yam, amala, fufu or eba are suggested accompaniments.[1]
