Nigerian jollof rice
Nigeria · Sub-Saharan Africa

Nigerian jollof rice is rice cooked in a seasoned tomato-and-pepper sauce. Lola Osinkolu blends red bell peppers, tomatoes, onion and Scotch bonnet for her sauce. She fries onion and tomato paste in oil, adds garlic, ginger and bay leaves, then cooks the blended vegetables until the sauce thickens. Thyme, curry powder and stock seasoning are added.[1]
Rinsed long-grain rice is stirred into the sauce and chicken stock added. After coming to a boil, the covered pot cooks over low heat until the rice is done. Sliced tomato and onion are added at the end and soften in the residual heat. Fried plantains, roast chicken or salad can accompany it.[1]
