selsko meso

Selsko meso is a meat-and-mushroom dish finished in an earthenware pan. Coolinarika contributor sandykanada’s home version combines cubed veal and pork with small meatballs. The meatballs mix minced meat, egg, onion, breadcrumbs and seasonings. Onion, carrot and celery cook first, followed by mushrooms, crushed red pepper, oregano, parsley and other seasonings.[1]

Veal simmers with water before pork and then the meatballs are added. When the meat is tender, a mixture of milk, flour and mustard goes into the pot. The preparation is transferred to an earthenware pan and baked. Grated mozzarella and fresh parsley are added near the end, and the dish returns to the oven until the cheese melts.[1]
