rakfisk

Rakfisk is a Norwegian preparation of salted, matured freshwater fish. A review of northern European fermented fish describes trout and Arctic char packed with salt and held under pressure in brine as they ripen. The preparation has a strong tradition in inland Norway.[1]

Noraker Gård in Aurdal, Valdres, produces rakfisk in mild, matured and well-matured varieties. The farm describes controlling salting and maturation during production. Its own visitor meals include rakfisk served in lefse, alongside talks about the farm’s fish production and history.[2][3]
