Omani harees

Omani harees is a thick preparation of wheat and meat. Experience Oman describes it as meat thickened with wheat. In a firsthand account of a meal at Dukanah, Bosky Dutia and Sami al Salmi describe wheat and chicken cooked with fragrant spices and served with ghee.[1][2]

Their account records a relatively chunky version, contrasting it with a more thoroughly beaten mixture in which the wheat becomes a thick purée and the chicken separates into fine strands. Fried onion and date molasses accompanied the restaurant’s preparation.[2]
