Sindhi biryani

Sindhi biryani is a layered rice and meat dish associated with Sindh in Pakistan. Fatima’s lamb recipe includes potatoes and dried plums, with yogurt, browned onions, garlic, ginger and spices forming the meat sauce. The lamb cooks until tender, while basmati rice is cooked separately with whole spices until partly done.[1]

The meat mixture and rice are layered with reserved fried onions, mint, coriander, lemon and tomato slices, and kewra water. The covered pot finishes cooking over low heat. Fatima serves the biryani with raita and salad, offering fried raisins and cashews separately as optional accompaniments.[1]
