Tama
Palau · Oceania

Tama are small sweet portions of dough fried in oil. A Year Cooking the World’s tested preparation combines flour, sugar, baking powder and salt with eggs, milk and vanilla. Spoonfuls of the mixture are fried until golden, producing sweets that the cook compares to doughnuts.[1]
Palau Community College documents a sweet-potato variation in its food-processing guide. The mix combines sweet-potato flour and wheat flour with powdered milk, sugar, baking powder, nutmeg and cinnamon. Egg and oil are added to make dough, which is divided into balls and deep-fried.[2]
