Sancocho de gallina panameño

Panamanian sancocho de gallina is a chicken soup seasoned with culantro and commonly made with yam. El Trapiche describes a traditional base of water, yam, hen, salt and culantro. The restaurant also notes that regional versions differ: Chiriquí preparations can include cassava, otoe, maize on the cob and pumpkin.[1]

A Chitré version described by chef Charlie Collins uses a young chicken instead of a mature hen. Oregano appears in many recipes, and some cooks begin with a mixture of green seasonings.[1]
