Mumu with pork and sweet potato

Davy O’Rourke’s preparation combines pork with chicken, sweet potato, taro, plantain and greens. Banana-leaf parcels cook among hot stones in a covered pit; leaves and banana stems help retain moisture.[1]
Bart and Emily Allen’s firsthand account of a Simbari mumu describes layers of ferns, taro, pumpkin, sweet potatoes and pork beneath banana leaves. The pork had already been cooked before joining the vegetables. The food was divided among the gathering after the pit was opened.[2]
