Tacu Tacu

Tacu tacu is a Peruvian preparation of rice and beans browned together in a pan. Anilú Cigüeñas cooks canario beans or lima beans with diced pork jowl, then blends some of the beans with sautéed onion, garlic and ají amarillo paste.[1]

The purée, remaining beans and cooked rice are mixed and shaped into croquettes, which are fried until browned outside and soft within. Her accompaniments are fried plantain, a fried egg and a beef steak coated in egg and breadcrumbs and cooked in a pan.[1]
