Bulalo
Philippines · Southeast Asia

Bulalo is a Filipino soup made with beef shanks and marrow bones. The meat simmers gently in water with onion, peppercorns and fish sauce until tender. Corn on the cob is added before the leafy pechay and spring onions, which need less cooking.[1]
The soup is served hot with steamed rice. A dipping sauce combines fish sauce, calamansi juice and chopped chilies. Other vegetable additions include cabbage, potatoes, green beans, carrots and sweet potatoes.[1]
