Cebu Lechon

Cebu lechon is whole roasted pig with aromatic stuffing and crisp skin. Marketman’s account of his Cebu family’s preferred Visayan lechon describes stuffing the pig’s cavity with lemongrass, spices and salt. The seasoning reaches the meat around the ribs as the pig roasts.[1]

In one of his own cooking trials, the stuffing included lemongrass, garlic, red onion, chilli and lemon. He also used thyme and rosemary on the scored skin. The pig turned on a spit over charcoal, and the crisp skin was served without sauce.[2]
