Chicken adobo
Philippines · Southeast Asia

Chicken adobo is a Filipino stew seasoned with vinegar, garlic and soy sauce. In Lalaine Manalo’s recipe, chicken marinates with soy sauce, onion, garlic, peppercorns and bay leaves, then is browned. Vinegar is added before the reserved marinade and water, and the chicken simmers in the sauce.[1]
Her version includes potato slices fried separately before being added near the end. The potatoes finish cooking as the sauce reduces. Chicken adobo is served with steamed rice, or with garlic fried rice and a fried egg for breakfast.[1]
