Chicken inasal

Chicken inasal is a grilled chicken dish associated with the Western Visayas. Lalaine Manalo’s marinade combines palm vinegar, calamansi juice, garlic, ginger, lemongrass and brown sugar. The chicken is drained after marinating and grilled over coals, with regular brushing of annatto-colored oil.[1]

Her oil is made by rendering chicken fat, then infusing it with annatto seeds, garlic and bay leaf before straining. The finished chicken is served with steamed rice and condiments such as calamansi mixed with soy sauce or sinamak, a spiced palm vinegar.[1]
