Lumpiang Shanghai

Lumpiang Shanghai are Filipino fried spring rolls filled with minced meat and vegetables. Lalaine Manalo’s version uses ground chicken with water chestnuts, carrot, spring onion, garlic and soy sauce. The filling is enclosed in thin wrappers, rolled tightly and sealed with water.[1]

The rolls are cut into short lengths and fried in batches until the wrappers are crisp and the meat cooked. They drain on a rack and are served with sweet-and-sour sauce or banana ketchup. Pork or beef can replace the chicken, and the rolls are served at gatherings or with rice as a meal.[1]
