Tomato-based pork stew with diced potatoes, carrots, and peppers in a foil serving tray.
Menudo

Filipino menudo is a pork stew cooked with tomatoes and vegetables. Lalaine Manalo’s recipe starts with annatto-colored oil, onion and garlic. Cubed pork shoulder is browned, then fish sauce and fresh tomatoes are added. Water is poured in and the pork simmers until tender.[1]

Potatoes and carrots cook before beef liver, peppers, chickpeas and raisins are added near the end. The sauce thickens as the ingredients finish cooking. Menudo is served with steamed rice, or used as a filling for pandesal or sliced bread.[1]
