Piyanggang manok

Piyanggang manok is a Tausug chicken dish with a dark coconut sauce. Its color and smoky flavor come from pamapa itum, a burnt coconut paste. Pepper.ph’s preparation marinates chicken drumsticks in this paste before braising them with onion, garlic, coconut cream, coconut milk and red chilies. Lemongrass is optional.[1]

The chicken simmers until cooked and the sauce thickens. It may then be briefly grilled on both sides, or served directly after braising. The remaining coconut sauce is spooned or brushed over the chicken, which is served hot with steamed rice.[1]
