balaleet
Qatar · Middle East and North Africa

Balaleet combines sweetened vermicelli with eggs and is eaten for breakfast in Qatar. The Captain Chef’s recipe fries half the noodles in oil until golden before adding the rest and boiling them in water. The drained noodles return to the pan with butter or ghee, sugar, spices and saffron steeped in rosewater.[1]
The eggs are seasoned with cardamom, salt and pepper, with saffron optional. They are cooked as an omelette or scrambled eggs and placed over the noodles on a serving platter.[1]
