Ciorbă de burtă

Ciorbă de burtă is a Romanian tripe soup finished with sour cream, egg yolks and garlic. Adriana’s preparation first cooks beef breast in water, then adds tripe and simmers it until tender. The tripe is removed and cut into strips while carrot, parsnip, onion, peppercorns, bay leaves and chilli cook in the broth. The beef and vegetables are removed before the tripe returns.[1]

Sour cream, egg yolks and garlic are warmed gradually with ladles of broth before being added off the heat. Oil coloured by frying grated carrot, pickled pepper and lemon juice finish this version. Extra sour cream, garlic sauce and vinegar are served alongside.[1]
