Ugali with bean stew

Ugali with bean stew combines a firm maize preparation with cooked beans in Rwanda. CRS Rice Bowl publishes the pairing as kawunga. Cornmeal and salt are stirred into boiling water, with further water added if needed to achieve the desired consistency. The mixture is stirred as it cooks and absorbs the liquid.[1]

For the accompaniment, onion and tomato are sautéed before cooked beans and some of their cooking liquid are added. Kate Taliaferro’s first-hand account of making the recipe describes shaping small portions of the firm maize preparation by hand to hold the beans.[1][2]
