Mofatah

Mofatah is a Saudi feast dish in which a whole cooked animal is served over rice. Also called kabsa al-mofatah, it is traditionally presented on one large platter shared by several diners. Keeping the meat intact during cooking is a defining feature of this preparation.[1]

The meat is cooked in a large pot, then the cooking broth is used to prepare the rice. Seasonings and cooking styles vary. Mofatah appears at weddings, graduations and family gatherings, as well as communal Ramadan meals.[1]
