Mutabbaq

Mutabbaq is a filled, folded dough parcel popular in western Saudi Arabia. A flexible sheet of dough is folded into a square around a filling. Savoury versions include minced meat, eggs and leeks, with garlic, onions, peppers and coriander among other ingredients used.[1]

It is cooked on a griddle and also made with sweet fillings, including banana, local cheese and sugar; cream versions are another variation. Mutabbaq is found at heritage festivals such as Historic Jeddah and the Kleija festival.[1]
