Pljeskavica

Pljeskavica is a round grilled minced-meat patty associated with Serbian cooking. The national tourism organisation describes a beef-and-spice version resembling a hamburger, alongside spicy versions and a gurmanska variation with bacon. Grilled meat dishes are eaten as street food, at family meals and at celebrations.^[1]

Nenad Veljković’s recipe uses mixed minced meat, salt, pepper, baking soda and carbonated water. Chopped onion, hot pepper and crushed red pepper are mixed into the rested meat before it is shaped into flat, round patties. They cook on a grill pan or charcoal grill and are served with chopped onion or another accompaniment.^[2]
