Koeksisters

Koeksisters are braided fried pastries soaked in cold sugar syrup. Charlene Pretorius’s preparation makes a syrup flavoured with cinnamon, ginger, lemon juice and zest, then chills it. The dough combines flour, salt, baking powder, butter, egg and water.[1]

After resting, the dough is rolled out and cut into strips. Two cuts leave three joined strands, which are plaited and pinched closed. The pastries fry until golden, drain briefly and go into the cold syrup while still hot. They are then lifted onto a rack to cool.[1]
