Bossam
South Korea · East Asia

Bossam is a Korean dish of cooked pork served with leaves and condiments for wrapping. Maangchi’s preparation boils pork belly or shoulder with onion, ginger, garlic, doenjang and brown sugar. Her version also adds instant hazelnut-flavoured coffee, a technique she learned from another cook at a community meal in Missouri.[1]
The cooked pork is sliced and served with pickled napa cabbage, spicy oyster-and-radish salad and a sauce made with fermented salted shrimp. A cabbage leaf holds a small portion of pork, salad and sauce, then folds around them to form a bite-sized parcel.[1]
