Spicy stew with noodles, tofu, and vegetables in a wide pot.
Budae-jjigae

Budae jjigae is a spicy Korean stew combining kimchi and chilli seasonings with processed meats. Maangchi’s preparation uses Spam and sliced sausage alongside pork, cabbage, onion and mushrooms. Gochujang, gochugaru, garlic, soy sauce and sugar form the seasoning paste.[1]

Her stock is made with dried anchovies, kelp and shiitake mushrooms, with the pork cooked in it before the stew is assembled. Instant ramyeon and sweet-potato starch noodles join the other ingredients in a shallow pot. Tofu, baked beans, rice cakes and cheese are optional additions. The stew can cook at the table, with extra stock added as the liquid reduces.[1]
