Busan Dwaeji-gukbap

Dwaeji gukbap is a pork-and-rice soup closely associated with Busan in South Korea. Its broth varies between clearer versions made by cooking pork in water and richer versions that include bones. Some bowls contain meat alone, while others add offal or sundae, a Korean sausage.[1]

The soup commonly comes with kimchi, salted shrimp and garlic chives, allowing diners to adjust its seasoning. Some restaurants add noodles. Rice may be served in the soup or alongside it; the related suyuk baekban meal includes separately served boiled pork. The tourism organization also describes toryeom, a traditional practice of repeatedly pouring hot broth over rice and draining it to warm the rice before serving.[1][2]
