Ganjang gejang

Ganjang gejang is a Korean dish of raw crab marinated in soy sauce. Maangchi’s version uses blue crabs or flower crabs. Its marinade is simmered with apple, onion, garlic, ginger, dried chilli, kelp and rice syrup, then strained and cooled before being poured over the cleaned crabs.[1]

The crab is served with rice and garnished with green onion, red chilli and toasted sesame seeds. Maangchi describes mixing rice into the shell with the roe, tomalley and marinade. She explains the nickname “rice thief” as a reference to how readily the dish is eaten with rice.[1]
