Gimbap

Gimbap is a Korean roll made with gim, sheets of dried seaweed, and bap, rice. Maangchi’s classic version seasons cooked rice with salt and toasted sesame oil, then wraps it around beef, carrot, yellow pickled radish, spinach and strips of cooked egg. The rolls are brushed with sesame oil, sprinkled with sesame seeds and sliced.[1]

The fillings are prepared separately: spinach is blanched and seasoned, carrot is sautéed, and marinated beef is cooked in a pan. Maangchi also suggests cucumber, imitation crab, red pepper, sausage or ham as substitutions. She recalls her mother making gimbap for school picnics, when children shared their rolls with friends.[1]
