Haemul pajeon

Haemul pajeon is a Korean pan-fried pancake with green onions and seafood. Maangchi’s recipe combines wheat flour and potato starch with stock or water. Long green onions are coated in batter and laid side by side in the pan, then topped with battered shrimp, squid or clams, sliced red chilli and beaten egg.[1]

The pancake is fried on both sides until browned and crisp. Its dipping sauce combines soy sauce, vinegar, gochugaru, green onion and toasted sesame seeds. Maangchi describes sharing it at Korean barbecue restaurants and pairing it with soju or makgeolli.[1]
