Short description: Hotteok is a sweet filled pancake pressed flat on a hot griddle until crisp outside and syrupy inside.
Ingredients: Yeasted wheat dough, often with glutinous rice flour, filled with brown sugar, cinnamon, nuts or seeds, then fried on a griddle.
Cultural note: It is especially associated with cold-weather street stalls, where the appeal is the contrast between crisp dough and lava-like filling.
Common misconception: It is not the same as an unfilled breakfast pancake; the sealed sweet center is the defining feature.
