Jeonju Bibimbap
South Korea · East Asia

Jeonju bibimbap is a regional Korean rice dish associated with the city of Jeonju. Rice is arranged beneath an assortment of seasoned vegetables, egg and often beef, then mixed with red chili paste and sesame oil before eating. Bean sprouts, spinach and bracken are familiar components. Each vegetable is prepared separately so its texture is suited to the final mixture. Beef may be cooked or served as seasoned raw beef in a yukhoe version, and the egg presentation also varies.[1]
Two details distinguish many Jeonju preparations: rice cooked with ox-bone or bean-sprout broth, and hwangpomuk, a mung-bean jelly colored yellow with gardenia fruit. The dish's early origins are uncertain; accounts connect it variously with palace cooking and food left from ancestral rites. Its modern restaurant tradition is well established in Jeonju, where it is served in traditional brass bowls as well as hot stone pots.[1][2]
