Jjajangmyeon

Jjajangmyeon is a Korean Chinese dish of thick, chewy wheat noodles topped with a dark sauce made from chunjang. Maangchi’s version fries pork belly with radish, potato, zucchini and onion. The paste is fried in oil in a cleared space in the pan, then mixed with the meat and vegetables.[1]

Water is added to simmer the sauce, which is thickened with potato starch and finished with sesame oil. It is spooned over separately boiled noodles and garnished with cucumber strips. Kimchi or yellow pickled radish accompanies the dish. The same sauce served over steamed rice makes jjajangbap.[1]
