Jjamppong

Jjamppong is a spicy Korean Chinese noodle soup with seafood, meat and vegetables. Maangchi’s recipe uses an anchovy-and-kelp broth with mussels, shrimp, squid and optional clams. Beef may be replaced by pork or chicken. Green onion, leek, cabbage, onion and bok choy accompany the meat and seafood.[1]

Garlic, ginger and meat are fried before gochugaru is stirred into the oil. Vegetables, broth and seafood follow; fish sauce and a separate gochugaru-and-sesame-oil mixture season the soup. The noodles are boiled separately and served beneath the hot soup. Maangchi learned this approach from a Korean grocery owner in Columbia, Missouri.[1]
