samgyeopsal

Samgyeopsal is Korean pork-belly barbecue, often cooked at the table and eaten in lettuce wraps. In Maangchi’s preparation, slices of pork belly cook on a grill plate or pan, turning until browned on both sides. Onion and garlic can cook alongside the meat, while lettuce and optional perilla leaves are set out for wrapping.[1]

A wrap combines cooked pork with ssamjang, onion or garlic and seasoned scallions. Her ssamjang mixes doenjang soybean paste with gochujang chilli paste, garlic, scallion, sugar, sesame seeds and sesame oil. The scallion salad is dressed separately with soy sauce, sugar, sesame seeds, sesame oil and chilli flakes.[1]
