Seolleongtang
South Korea · East Asia

Seolleongtang is a Korean beef-bone soup whose pale, milky broth develops through prolonged cooking. Maangchi’s family recipe cooks ox bones with beef, onion and radish. The meat and radish are removed before the bones continue simmering. In a small pot, the broth can be collected in successive batches and combined.[1]
For serving, sliced cooked beef and radish are added to the reheated broth. Rice and kimchi accompany the bowl, while salt, scallions and black pepper allow diners to season the soup to taste. Maangchi also describes a spicy variation in which cooked beef is mixed with soy sauce, chilli flakes, scallions and sesame oil before being added to the soup.[1]
