Tteokbokki is a Korean street-food dish of chewy rice cakes in a spicy, slightly sweet sauce. Maangchi’s version uses cylindrical rice cakes in broth made with dried anchovies and kelp. After the stock ingredients are removed, the rice cakes simmer with gochujang, gochugaru, sugar and long pieces of green onion.[1]

Fish cakes and hard-boiled eggs are optional additions. Stirring continues as the rice cakes soften and the sauce becomes thick and glossy. Maangchi recalls schoolchildren buying small paper cups of tteokbokki from street vendors, and also describes variations with dumplings, cabbage, cheese or ramyeon noodles.[1]
