Shallow pan of black squid-ink rice with seafood and lemon wedges.
Arròs negre

Arròs negre is rice cooked with cuttlefish and its ink. In a Vilanova i la Geltrú preparation, onion, tomato, garlic, parsley and carrot are cooked into a sofregit and passed through a food mill.[1]

Small pieces of cuttlefish, ink, the sofregit and rice are combined in a paella pan. Fish stock is added and the rice cooks in this mixture. A little allioli accompanies the finished dish.[1]
