Cachopo asturiano

Cachopo is an Asturian dish of meat enclosing ham and cheese beneath a crisp breadcrumb coating. The preparation from Las Tablas del Campillín uses two beef steaks with layers of Asturian cheese and Iberian ham between them.[1]

The edges are pressed together, and the filled steaks are coated in flour, beaten egg and breadcrumbs in that order. They are fried and turned so that both sides become golden and crisp. Fried potatoes and peppers accompany the finished cachopo.[1]
