Migas extremeñas

Migas extremeñas are a bread-based dish associated with Extremadura. Day-old bread is finely crumbled and moistened before cooking. Garlic and dried peppers are fried in oil, followed by pieces of pork belly, sweet paprika and the bread. Stirring the mixture keeps the crumbs separate as they brown.[1]

The bread is the main ingredient, with pork and vegetables flavoring the crumbs. Eggs, ham, chorizo or blood sausage can be added to make a more substantial meal.[1]
