Surinamese chicken roti
Suriname · Latin America

Surinamese chicken roti pairs a flatbread with masala chicken, potatoes, long beans and often boiled egg. Surinamcooking’s chicken preparation softens onion and garlic in oil, then cooks tomato paste and masala before adding the chicken. Stock seasoning and water help it cook with a sauce. Potatoes are prepared separately in similar seasonings, with long beans added as they approach tenderness. Peeled hard-boiled eggs can be coated in the chicken’s masala sauce.[1]
The accompanying flatbread can be bought or made at home. The site’s homemade version encloses mashed potato seasoned with garlic, cumin, butter, salt and cayenne in wheat-flour dough. It is rolled thin and cooked on an oiled pan or tawa, then eaten by hand with the accompaniments.[2]
