Malakoff

Malakoff is served hot, with a golden fried coating surrounding the cheese. Vaud’s regional tourism page associates it with La Côte and presents a recipe from the paysannes vaudoises, using short sticks of Gruyère marinated in white wine.[1]

The cheese is removed from the wine and dusted with flour. A batter of flour, egg, milk and salt coats the pieces before they are fried in oil and drained. This version is served with green salad; the wine is used to marinate the cheese before frying.[1]
