Melted cheese spread over small potatoes with pickles and onions.
raclette valaisanne

Raclette valaisanne is a Valais cheese dish served with potatoes and pickles. In the classic preparation published by the regional cheese association, a half-wheel of cheese is placed beneath a heater. Once its surface becomes runny, the melted layer is scraped with a large knife onto a warm plate, tilting the cheese toward the plate.[1]

Small potatoes cooked in their skins, gherkins and pickled onions accompany the cheese. The association also describes melting cheese over a wood fire and using individual-pan raclette ovens. Its suggested drink is Fendant from Valais.[1]
