rösti

Rösti can be made with raw or previously cooked potatoes. Grated potato is fried in butter or another fat and shaped into a flat, round cake with a crisp crust. It can accompany meat or fried eggs.[1]

The illustrated recipe published by swisspatat uses potatoes cooked in their skins, cooled, peeled and coarsely grated. They are browned with salt and fat before being pressed into a cake. A plate helps turn it so that the second side can brown. The recipe also offers onion, bacon or raw potatoes as variations.[2]
