bubble tea with tapioca pearls
Taiwan · East Asia

Bubble tea with tapioca pearls combines tea, milk and sweetener with chewy pearls at the bottom of the drink. In Lisa Lin’s preparation, the tea is brewed strongly because milk and ice will dilute it. The pearls are boiled separately, rinsed and mixed with a little sugar syrup before the drink is assembled. A wide straw allows the pearls to be taken together with the tea.[1]
Lin uses black tea in her published recipe but also describes strongly flavoured green tea as an alternative. Whole milk is her chosen dairy ingredient, with the amount of milk and syrup adjusted to taste.[1]
